THERMOMIX PANINI
(bread)


Ingredients:
100 gr Manitoba flour
520 gr all-purpose flour
340 gr water
1 teaspoon of malt
10 gr salt
¾ cake of fresh yeast

(click on the links to see photos)


Pour water, malt and the crumbled yeast into Thermomix bowl: 30 seconds / speed 3.

Add flour and salt and mix 20 seconds/speed 4 + knead 3 minutes.
Take dough out of Thermomix bowl and let rise (I've put it on a floured surface covered with a big bowl turned upside down and all covered with a towel)

When the dough has doubled its size, pull off some pieces (each piece should weigh 40-70 gr) and roll them out into thin rounds (on a floured surface) and then let rise for 15 minutes.

Shape pieces into desired shape (I used a special tool which is called "attrezzo forma rosette")

Cover baking sheet with floured baking paper.
Place the pieces gently on baking sheet, cover with a towel and let rise for about 1 hour, in a lukewarm place.

Bake in preheated oven at 230-250° C for about 20 minutes (put a pot of water in oven for humidity), till panini bread gets golden brown.
