TUSCAN MEAT SAUCE (FIRST COURSE)
Ingredients (servers 4-6):
gr. 250 of minced beef
gr. 300 of chicken livers
1 carrot
1 celery stalk
parsley
half an onion
Basil
6 tablespoons of olive oil
half a glass of red wine
gr. 300 of peeled tomatoes
1 pinch of dried mushrooms soaked in warm water
salt
pepper
Preparation:
Savour the chicken livers in a little oil and chop it up. Put the mincemeat in a saucepan with the livers, the chopped vegetables, olive oil, salt and pepper. Brown and, when it starts drying, add the wine and let it evaporate on a high burner. Add the chopped tomatoes. Cover and simmer very slowly for about an hour. Add the chopped mushrooms and their water. When the sauce has condensed, serve as dressing for pasta, gnocchi or polenta. _________________
