"Ciabatta" bread (with Thermomix)
Ingredients:
For poolish:
200 g flour
200 ml water
1 gr of cake yeast
To be added later:
200 g flour
80 ml water
5 gr cake yeast
half teaspoon of malt
1 level teaspoon of salt

Put 200 ml water and 1 gr cake yeast into Thermomix bowl: 10 seconds /speed 4.
Add flour, 1 minute /speed 4-6, let rise, covered, all night long (10-12 hours).
Add the other ingredients in the following order: yeast, malt, water, flour and salt - 1 minute / speed 6 and knead 3 minutes (if you have Thermomix model TM21, knead for 1 and a half minute, let rest for few seconds, and then knead again for 1 and a half minute)
Form in a shape like in the photos and let rise on baking paper (previously floured with bran wheat flour) for about 1 hour.
Cut dough in two and stretch in a rectangular shape (without kneading) typical of "ciabatta" bread (see photos). Place cut side facing up.
Let rise for another hour, turn them upside down and stretch them a bit more so that they go from one side of baking sheet to the other.
Bake in preheated oven at 220° C for 10 minutes and around 15/20 minutes at 200° C (put a pot of water in oven for humidity).
